Arugula and Baby Roma Tomato Salad
Ingredients

DRESSING

1 tablespoon shallots, finely chopped

1/2 teaspoon salt

1/2 teaspoon pepper, freshly ground

1 teaspoon Dijon mustard

1/4 cup balsamic vinegar

1 tablespoon honey
-
1/3 cup olive oil

SALAD
-
5 ounces baby arugula leaves, washed and dried

1 pint Roma tomatoes, baby romas or grape tomatoes, cut in half
Preparation

DRESSING
Measure all ingredients into a bowl. Whisk vigorously to combine. Set aside

SALAD
In a large bowl, combine the tomatoes and arugula.

Toss with 4 tablespoons of vinaigrette dressing, divide between 4 plates and serve. Save remaining salad dressing for another use.
