Asian inspired Bok Choy
Ingredients

1 teaspoon extra virgin olive oil

1 teaspoon garlic, finely chopped

1 teaspoon fresh ginger root, peeled and finely chopped

1 1/2 pounds bok choy, preferably baby, stems and leaves cut into 1-inch lengths.

salt and ground pepper, as desired

pinch sugar or your preferred sweetener
Preparation

Thoroughly wash bok choy to remove any grit.

Warm olive oil in a large skillet over medium-high heat. Add garlic and ginger and stir until fragrant, about 30 seconds. Add bok choy stems and stir-fry about 2-3 minutes.

Add leaves and cook an additional 2 minutes. Add 2-4 tablespoons of water if necessary to deglaze pan.

Season with salt, pepper and sugar to taste.
