Ingredients
- 2 large eggs
- 1 cup unsweetened almond milk
- 2 tablespoons olive oil
- 2 tablespoons maple syrup
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- pinch of salt, or as desired
- 3 very ripe bananas, mashed, about 1 1/3 cups
- 2 cups rolled oats
- 1 1/2 teaspoons baking powder
- 1 cup blueberries, fresh or frozen

Preparation
- Preheat oven to 350F Spray 8x8-inch baking pan with cooking oil.
- In a medium/large bowl whisk together eggs, almond milk, oil, maple syrup, vanilla, cinnamon, salt (optional) and bananas. Stir in the oats, baking powder and blueberries to combine well.
- Pour mixture into baking pan. Place in oven and bake for 35 - 40 minutes or until set and lightly brown at the edges. Allow to cool before slicing. When cool cut into 16 2" x 2" squares.
