Cake Brownies
Ingredients

1/4 cup canola oil

1/4 cup unsweetened applesauce

1 1/4 cup sugar

3 egg whites

1/8 cup low fat milk

1 cup sweet potato, cooked, peeled and mashed

3/4 cup baking cocoa

1/2 teaspoon baking powder

1/2 tablespoon vanilla extract

3/4 cup all-purpose flour

1/2 cup oatmeal
-
1/2 cup walnuts, chopped
Preparation

Preheat oven to 350F. Lightly grease a 9 x 12-inch baking pan.

Mix the oil, applesauce and sugar with a whisk or with a hand mixer on low. Add the egg whites one by one, whisking after each addition.

Scrape the bowl well.

Mix the milk and sweet potato together. Add the sweet potato mixture along with the rest of the ingredients, except the walnuts to the bowl. Mix well.

Spread batter in pan. Top with walnuts and bake until the brownies are firm in the center, about 30 minutes.
