Caramelized Carrots
Ingredients

3 cups carrots,about 12-14 carrots, peeled and sliced on the diagonal 1 inch thick

1 tablespoon extra virgin olive oil

sea salt and freshly ground black pepper, as desired

1 teaspoon honey
Preparation

Preheat oven to 400 F.

In a medium bowl toss carrots with olive, salt, and pepper to coat. Spread in a single layer into a glass baking dish. Roast until tender and slightly caramelized, stirring once about half way through the cooking process, 35 -40 minutes.

Remove from oven, drizzle with honey, stir again then return to oven for an additional 5 minutes.
