Carnival of Tomatoes

Ingredients

  • 4 cups cherry tomatoes, halved, variety of yellow orange and heirloom
  • 1 large shallot, finely chopped
  • 1/3 cup scallions, thinly sliced
  • 1 jalapeno pepper, seeded and finely chopped or 1/4 teaspoon hot pepper flakes
  • 1/3 cup balsamic vinegar, preferably white balsamic or white wine vinegar
  • 2 teaspoons honey
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 avocado, optional, cut into medium dice

Preparation

  1. Combine the first 4 ingredients in a large bowl. In a small bowl, whisk together the remaining ingredients except the avocado. Pour dressing over the tomatoes tossing gently to coat.Allow to marinate at room temperature 1 hour before serving. Just before serving add the avocado and toss again.
