Carnival of Tomatoes
Ingredients

4 cups cherry tomatoes, halved, variety of yellow orange and heirloom

1 large shallot, finely chopped

1/3 cup scallions, thinly sliced

1 jalapeno pepper, seeded and finely chopped or 1/4 teaspoon hot pepper flakes

1/3 cup balsamic vinegar, preferably white balsamic or white wine vinegar

2 teaspoons honey
-
2 tablespoons olive oil
-
1 teaspoon ground cumin
-
1/2 teaspoon salt
-
1/2 teaspoon freshly ground black pepper

1 avocado, optional, cut into medium dice
Preparation

Combine the first 4 ingredients in a large bowl. In a small bowl, whisk together the remaining ingredients except the avocado. Pour dressing over the tomatoes tossing gently to coat.Allow to
marinate at room temperature 1 hour before serving. Just before serving add the avocado and toss again.
