Carrot Ginger Dressing

Ingredients

  • 2 medium carrots, peeled and sliced into 1/2" thick slices
  • 2 tablespoons fresh ginger, peeled and chopped
  • 1 small shallot, peeled and chopped
  • 2 tablespoons honey (or agave or sugar for vegan)
  • 2 tablespoons fresh lime juice
  • 2 teaspoons toasted sesame oil
  • 1 tablespoon reduced sodium tamari (or reduced sodium soy sauce)
  • 1/4 cup rice vinegar (unseasoned)
  • 1/4 cup avocado oil

Preparation

  1. In a blender, combine all of the ingredients. Blend until smooth. Store in a glass jar or covered container in the refrigerator for up to 2 weeks.
  2. Serve over crisp lettuce, a bit of shredded red cabbage, some sliced cucumbers, radishes and other vegetables as desired.
