Chewy Double Chocolate Cookies with Dried Cherries
Ingredients

1/2 cup barley flour or oat flour

1/2 cup all-purpose flour

1/3 cup Dutch processed cocoa, such as Ghirardelli or Droste

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

1 cup sugar

5 tablespoons butter, softened

1 teaspoon vanilla extract

1 large egg
-
2/3 cup dried tart cherries, such as Montmorency

1/3 cup chopped walnuts, lightly toasted

1/3 cup chocolate chips
Preparation

Line two cookie sheets with parchment paper. Preheat oven to 350 F.

In a medium bowl, combine the first 6 ingredients and whisk well to blend. In the bowl of a mixer, combine the butter and sugar and beat on high speed until creamy, about 5 minutes. Add vanilla and egg and beat another minute or until well combined.

With the mixer on low speed, add the dry ingredients and mix until just combined. Add the cherries, walnuts and choclate chips.

Scoop batter by the tablespoon, a small ice cream scoop works well, and place 2-inches apart onto prepared cookie sheets.

Bake in preheated oven for 10-12 minutes or until cookies puff and are just set. Remove from oven and cool on wire racks. When cool, store cookies in an airtight container.
