Chicken Salad Sandwiches

Ingredients

  • 1 cup seedless green grapes, cut in half
  • 1/2 cup chopped red onion
  • 1/3 cup finely chopped celery
  • 1/3 cup light mayonnaise
  • 3 tablespoons fresh lemon juice
  • 4 Romaine lettuce leaves
  • 2 cups coarsely chopped skinless, boneless cooked chicken
  • 8 slices whole grain bread
  • 2 cups apple slices

Preparation

  1. Coarsely chop chicken and place in a medium bowl. Add grapes, red onion, celery, mayonnaise and lemon juice; toss gently to combine.
  2. Spread salad on bread, top with lettuce leaves.
  3. Serve with apple slices.
