Chicken Salad Sandwiches
Ingredients

1 cup seedless green grapes, cut in half

1/2 cup chopped red onion

1/3 cup finely chopped celery

1/3 cup light mayonnaise

3 tablespoons fresh lemon juice

4 Romaine lettuce leaves

2 cups coarsely chopped skinless, boneless cooked chicken

8 slices whole grain bread

2 cups apple slices
Preparation

Coarsely chop chicken and place in a medium bowl. Add grapes, red onion, celery, mayonnaise and lemon juice; toss gently to combine.

Spread salad on bread, top with lettuce leaves.

Serve with apple slices.
