Ingredients
- 12 oz. linguine, spaghetti or other favorite pasta
- 12 oz. cherry or grape tomatoes, halved
- 1 medium onion, thinly sliced(about 2 cups)
- 4 cloves garlic, thinly sliced
- 1/2 teaspoon red pepper flakes
- 2 sprigs fresh basil, plus torn leaves for garnish
- 2 tablespoons extra-virgin olive oil
- 1 teaspoon salt
- 1/4 teaspoon ground black pepper
- 4 1/2 cups water
- 1/2 cup grated parmesan or pecorino cheese
Preparation
- Combine pasta, tomatoes, onion, garlic, red pepper flakes, basil, oil, salt, black pepper and water in a large straight-sided pot or dutch oven. The pasta should lay flat and submerged in the liquid.
- Bring to a boil over high heat. Simmer mixture, stirring and turning pasta frequently with tongs or a fork until pasta is al dente and water has nearly evaporated, about 9 minutes. Add the parmesan cheese and stir into pasta until melted into a creamy sauce.
- Season to taste with salt and pepper. Divide among 4 bowls and garnish with more basil and parmesan cheese if desired.
