Cucumber Pineapple Salad
Ingredients

1 small hot house cucumber, washed and peeled

1/2 small red onion

1 lime, juiced

1/4 teaspoon salt

1/2 small fresh pineapple, washed, trimmed and cut into small cubes

Special Equipment: Mandoline slicer

Serving option: One half of a Jalapeno, finely diced
Preparation

In a medium bowl, thinly slice the cucumber with a mandoline slicer. With the same slicer, thinly slice the red onion and add to the bowl. Add the lime juice, salt and pineapple and toss to coat.

Cover and refrigerate at least one hour so the juice from the pineapple and the lime infuse the vegetables.
