Dinosaur Kale with Almonds and Golden Raisins
Ingredients

1 pound kale, Dinosaur or Lacinato, about 2 bunches

1 large leek, cleaned and chopped

1 clove garlic, left whole with skin on

1/4 cup dry white wine, vegetable broth or water

1/2 cup water or vegetable broth

1/4 cup golden raisins
-
1/2 teaspoon sea salt or to taste

1 dash hot sauce
-
1/4 cup almonds, dry-roasted, chopped
Preparation

Thoroughly wash the kale and strip it off the stalks, discard the stalks. Chop into bite-size pieces.

In a large saute pan, heat the olive oil and wine to boiling. Add the chopped leek and garlic, cover and turn down the heat and simmer for 5 minutes . Increase heat to medium-high, add the water, bring to a boil. Add the kale, raisins, and salt, tossing to coat it with the liquid.

Continue to cook, covered, about 8 more minutes until the kale turns a darker shade and becomes tender, but not mushy. Drain off any remaining liquid. Remove garlic,squeeze it from its paper shell, chop and return it to the kale mixture.

Toss well and serve with chopped almonds sprinkled on top.
