French Tarragon Pesto
Ingredients

1/3 cup macadamia nuts, lightly toasted

1 clove garlic

1/2 teaspoon salt

1/4 teaspoon ground black pepper

1 cup Italian parsley, coarse stems removed

1 cup fresh tarragon, coarse stems removed

1 tablespoon lemon juice

1 tablespoon lemon zest
-
2 tablespoons extra virgin olive oil
Preparation

Place nuts into a food processor fitted the the steel S blade, pulse to chop.

With the machine running add the remaining ingredients except the olive oil, one at a time, stopping the machine to scrape down the sides of the bowl from time to time.

When ingredients are quite well blended, slowly add the olive oil while the machine is running.

Transfer to a container, seal, and refrigerate until ready to use.
