GI Quinoa, Grape and Prune Salad
Ingredients

2 cups water

1 cup quinoa, rinsed through a fine mesh strainer

1 cup red seedless grapes, halved

1/2 cup pitted dried prunes, chopped

1/2 cup thinly sliced celery

1/2 cup green onion, sliced

1/2 cup walnuts, pecans or almonds chopped(optional)

1/3 cup extra virgin olive oil

1/4 cup red wine vinegar
-
1 tablespoon honey
-
1 clove garlic, minced

1/2 teaspoon salt
-
1/4 teaspoon of ground black pepper
Preparation

Add quinoa and water to medium saucepan. Add a pinch of salt. Bring to a boil and reduce heat and let simmer, covered, for approx. 12 minutes or until most of the liquid is absorbed. Turn off heat and let stand covered for 10 minutes, then fluff with a fork and let cool.

In a large bowl, whisk dressing ingredients together. Add grapes, prunes, celery and green onions and mix together. Add cooled quinoa and combine thoroughly. Cover and chill for at least 1 hour. Add optional nuts just before serving.
