Gingered Mixed Melons with Mint*
Ingredients

2 cups cantaloupe, peeled, seeded, and cubed

2 cups honeydew melon, peeled, seeded, and cubed

2 cups watermelon, peeled, seeded, and cubed

1 tablespoon fresh mint, finely sliced

1 tablespoon fresh lime juice

1 teaspoon honey

1 tablespoon grated ginger root, squeezed to yield 1 teaspoon juice
Preparation

In a large bowl, combine melons and mint. In a small bowl, stir together remaining ingredients. Drizzle over melons and toss gently.

Great served right away or it will hold 1 to 2 days.
