Glazed Carrot Sticks
Ingredients

1 tablespoon extra virgin olive oil

1 pound carrots, peeled and cut into 2-inch x 1/4-inch sticks

1 tablespoon honey

Salt, as desired

Optional seasonings: 1/2 teaspoon lemon zest, 1/2 teaspoon fresh thyme leaves or your favorite herb or spice
Preparation

In a medium to large skillet, warm olive oil over medium-high heat. Add carrots and cook 5 minutes, tossing often. Reduce the heat to med-low, cover the skillet and cook until tender, about 5 more minutes. Add honey to coat and simmer a few minutes until juices thicken a bit. Season with salt to taste. If desired, add the lemon zest and thyme.
