Granola Cookies
Ingredients

1/2 cup coconut oil

1 cup light brown sugar

2 large eggs

1 teaspoon vanilla extract

1 1/4 cup all purpose flour

1/2 teaspoon baking soda

1/2 teaspoon ground cinnamon

1 teaspoon salt

1/2 cup old fashioned oats

1/4 cup unsalted sunflower kernels, toasted

1/2 cup pumpkin seeds, toasted

3/4 cup large coconut chips or flakes

5 ounce dark chocolate (72% cacao) bar, chopped, about 1 cup

1 cup dried tart cherries, chopped
Preparation

Preheat oven to 350 degrees.

Beat oil and brown sugar in a bowl on medium speed until combined. Beat in eggs and vanilla. Add flour, baking soda, cinnamon and salt; beat until combined. Stir in remaining ingredients.

Using a small teaspoon, measure out cookies about 2 inches apart on a parchment lined baking sheet. Bake 8-10 minutes, rotating pans on oven rack after 5 minutes. Bake until the edges of cookies are light brown.

Remove from oven and cool on baking sheet about 5 minutes or until set, then place on a cooling rack.
