Mini Veggie Frittatas
Ingredients

12 eggs

1 cup broccoli, finely chopped

1/2 cup grated carrot (~1 large carrot)

1 red bell pepper, diced

1 tbsp olive oil

Spray oil

1 cup cheddar cheese, shredded

1/2 cup 1% milk
-
1-2 tsp garlic powder
-
1 tbsp dried basil
-
1 tbsp dried parsley
-
Salt, to taste

Black Papper, to taste
Preparation

Preheat the oven to350 degrees

Heat the oil in a medium frying pan over medium heat. Add the broccoli, carrot, and bell pepper to the pan.

Cook 3-5 minutes until the vegetables become tender, stirring occasionally.

In a large bowl, whisk together the eggs, milk, and spices. Add the cheese and cooked vegetables to the egg mixture and stir to
combine.

Spray two 12-well muffin tins with oil.

Carefully pour the egg mixture into each well. Fill muffin well ~3/4 full. This recipe should make approximately 18 mini frittatas.

Bake in the oven for 15-18 minutes until knife inserted comes out clean. Let them cool for 2 minutes before serving.
