Purple Power Slaw with Sesame-Ginger Vinaigrette
Ingredients

1/4 cup toasted sesame oil

2 tablespoons rice vinegar

1 1/2 tablespoons reduced sodium tamari or soy sauce

1 tablespoon fresh ginger grated

1 clove garlic, minced

1/4 teaspoon salt

4 cups thinly sliced red/purple cabbage

1 large carrot, orange or purple, cut into matchsticks

1 small white or purple daikon, peeled and cut into matchsticks

4 tablespoons cilantro, chopped

4 tablespoons scallions, sliced

1 tablespoon toasted sesame seeds
Preparation

Whisk oil, vinegar, tamari, honey, ginger, garlic and salt in a large bowl. Add cabbage, carrot, daikon and 3 tablespoons each of cilantro and scallions; toss to coat. Serve the slaw topped with sesame seeds and the remaining cilantro and scallions.
