Purple Power Slaw with Sesame-Ginger Vinaigrette

Ingredients

  • 1/4 cup toasted sesame oil
  • 2 tablespoons rice vinegar
  • 1 1/2 tablespoons reduced sodium tamari or soy sauce
  • 1 tablespoon fresh ginger grated
  • 1 clove garlic, minced
  • 1/4 teaspoon salt
  • 4 cups thinly sliced red/purple cabbage
  • 1 large carrot, orange or purple, cut into matchsticks
  • 1 small white or purple daikon, peeled and cut into matchsticks
  • 4 tablespoons cilantro, chopped
  • 4 tablespoons scallions, sliced
  • 1 tablespoon toasted sesame seeds

Preparation

  1. Whisk oil, vinegar, tamari, honey, ginger, garlic and salt in a large bowl. Add cabbage, carrot, daikon and 3 tablespoons each of cilantro and scallions; toss to coat. Serve the slaw topped with sesame seeds and the remaining cilantro and scallions.
