Quenching Rhubarb & Grapefruit Aqua Fresca
Ingredients

2 tablespoons ginger root, peeled and cut into 1/8 inch slices

3/4 cup celery, diced

2 1/2 cups rhubarb, diced

3-1 inch strips of grapefruit zest

1 cup sugar
-
1 1/2 cup water
-
1 1/2 cups fresh pink grapefruit juice

72 ounces sparkling water

12 peppermint leaves and 3 grapefruit slices cut into quarters, for garnish
Preparation

In a medium saucepan, add the ginger root, celery, rhubarb, grapefruit zest and sugar to the water. Bring to a boil over
medium heat, stirring to dissolve the sugar. Lower the heat to simmer, partially cover and cook for 10 minutes.
Remove the cover and continue to simmer for an additional 5 minutes. Allow to cool completely, then strain the liquid
from the solids (see the Tip).

To make the beverage, measure 2 tablespoons of the strained juice and 2 tablespoons of the fresh squeezed grapefruit
juice into each serving glass.

Top each glass with 6 ounces of sparkling water and garnish with a sprig of mint and a 1/4 of a slice of grapefruit,
if desired.
