Rotisserie Chicken Pita Sandwiches Tsatsiki
Ingredients

1 cup English cucumber, peeled, seeded, and diced

1 teaspoon fresh lemon juice

1 1/2 cups Greek lowfat plain yogurt

1 1/2 teaspoons minced garlic sea salt and pepper to taste

1/2 cup thinly sliced red onion, soaked in ice water for 20 minutes

3 cups cooked chicken, 1/2 rotisserie chicken

1/4 cup flat leaf parsley, finely chopped

1 tablespoon fresh mint, finely chopped

1 tablespoon fresh oregano, finely chopped

1 tablespoon fresh dill, finely chopped

4 whole wheat pita breads, cut in half season with sea salt and pepper, to taste
Preparation

In a medium bowl combine cucumber, lemon juice, yogurt, and garlic. Season to taste with salt and pepper. Set aside.

Drain onions and pat dry. Place onions into a medium-large bowl and toss with chicken and herbs. Open pita pockets and fill with chicken mixture and spoon in cucumber sauce, the Tsatsiki sauce. Taste and adjust seasonings and serve.
