Ingredients
- 1 teaspoon sesame seeds
- 2 teaspoons avocado oil or olive oil
- 1 cup red onion, sliced julienne
- 1 cup red bell pepper, sliced julienne
- 8 ounces snap peas or snow peas, trimmed and strings removed
- 1 teaspoon sesame oil
- sea salt and freshly ground black pepper - as desired
Preparation
- Place sesame seeds into a dry skillet over medium heat and toast them until lightly golden and fragrant. Remove from pan and set aside.
- Return skillet to medium heat. Add avocado oil or olive oil to skillet and heat until shimmering. Add onion and cook 1- 2 minutes until crisp-tender. Add bell pepper, cook an additional 1 - 2 minutes. Toss in snap peas. Cook until tender but still crisp. Stir in sesame oil. Season with sea salt and freshly ground pepper as desired. Sprinkle with toasted sesame seeds.
