Simple Herb Smothered Salmon
Ingredients

24 ounces salmon fillet, skinned and portioned into 6 servings

1 tablespoon fresh lemon juice, removing the zest before juicing

Salt and ground black pepper, as desired

1 teaspoon Dijon mustard

1 teaspoon extra virgin olive oil

2 tablespoons chopped shallot

2 tablespoons fresh dill, chopped

2 tablespoons fresh tarragon, chopped

2 teaspoons herbes de Provence

2 teaspoons lemon zest
-
2 teaspoons extra virgin olive oil
Preparation

Preheat oven to 400 F

Splash lemon juice over salmon, then pat dry. Season with salt and pepper as desired, then spread with mustard. Use 1 teaspoon of olive oil to cover a rimmed baking dish that is large enough to hold the salmon in a single layer.Place fillets into prepared pan.

In a small bowl, combine the remaining ingredients except the 2 teaspoons of olive oil. Press the herb mixture into the fillets. Drizzle with the olive oil.

Bake in preheated oven for 10 - 15 minutes, 10 minutes per inch of thickness and 145' judging from the thickest end of the fish, until salmon is no longer pink when parted at its thickest section with the point of a paring knife.
