Simple Vegetable Stew with Fresh Herbs
Ingredients

2 potatoes, diced, peeling is optional

2 cans chick peas, drained and rinsed

1 8oz can tomato sauce, no added salt

1 teaspoon fresh rosemary, finely chopped

Salt to taste

2 tablespoons fresh chives, shipped

1 teaspoon fresh thyme, finely chopped

1 15 ounce can stewed tomoatoes, no added salt

Freshly ground pepper, to taste

1/2 cup fresh spinach, washed and shredded
Preparation

Scrub and dice potatoes. Steam until firm but tender, about 10 minutes and drain

While potatoes are steaming, combine all remaining ingredients except spinach in a deep dish 3 quart baking pan. Add drained potatoes.

Cover baking pan with aluminum foil and bake for 35 to 40 minutes or until bubbling

Fold in fresh shredded spinach just before serving.

To make in the microwave, scrub and dice potatoes. Combine all ingredients except the spinach in microwave casserole dish. Cover and microwave 15 to 20 minutes. Fold in fresh shredded spinach just before serving.
