Smokey Simmered Collard Greens
Ingredients

1 tablespoon olive oil

1 medium onion , about 1 1/2 cups chopped

1 cup chopped leeks

2 cloves garlic, chopped

1/2 pound smoked turkey breast or 1 smoked turkey drumstick.

6 cups water

1 1/2 pounds collard greens, tough stems discarded and the rest chopped

salt and pepper to taste
Preparation

In a large pot, warm olive oil over medium heat. Add onion, leeks, and garlic and saute for 5-8 minutes or until soft. Add smoked turkey leg and 6 cups of water. Bring to a boil and reduce heat to low. Cover and cook 1 hour.

Add collard greens, cover and cook an additional 40 minutes.

With the pot still on the burner, turn off heat and remove turkey drumstick from the pot. Return the lid to the pot. When the drumstick is cool enough to handle, remove skin and discard. Separate meat from bones and tendons. Chop meat and return to greens in the pot. Season with salt and pepper to taste.
