Southwest Salmon with Avocado Salsa
Ingredients

2 1/2 pounds salmon fillet, skinned, and portioned into 6 servings

2 tablespoons lime juice

1 tablespoon olive oil

2 tablespoons ground cumin

1/2 teaspoon paprika

1 teaspoon salt

1/2 teaspoon ground black pepper

1/3 cup lime juice
-
1 1/2 cups avocados, about 2 small, diced

1 cup English cucumber, peeled and diced
-
2 tablespoons shallot, finely chopped
-
1 1/2 cups mango, about 1, diced

2 tablespoons jalapeno, seeded and finely chopped or pickled jalapeno

1/3 cup cilantro, coarsely chopped

salt and pepper to taste
Preparation

Preheat broiler. Line a broiler pan with nonstick aluminum foil.

Wash salmon with the lime juice, pat dry. Drizzle olive oil over both sides of salmon.

In a small bowl, combine the cumin, paprika, salt, and pepper; sprinkle over both sides of salmon. Arrange salmon on the prepared broiler pan and place under preheated broiler for 5 minutes. Check for doneness, if the top of the salmon is browning nicely but the fish is not cooked through, turn the oven down to 450 F and cook for another 5 minutes. Salmon will be cooked when the center of the thickest part is opaque.

Meanwhile, combine all remaining ingredients for the salsa. Season with salt and pepper to taste.
