Spiced Skillet Shrimp
Ingredients

1 tablespoon olive oil

1 medium onion, thinly sliced lengthwise

1 teaspoon minced garlic, about 1 large garlic clove

2 teaspoons fresh ginger, finely chopped

1 tablespoon jalapeno pepper, seeded and chopped

1/2 teaspoon salt

1/2 teaspoon curry powder, such as Madras curry

1 cup cherry tomatoes, cut into quarters

1 pound large shrimp, raw, peeled and deveined

1/4 cup chopped fresh cilantro
Preparation

Warm olive oil in a large skillet or wok over medium heat. Add onion and cook until golden, about 6-8 minutes. Add garlic, ginger and jalapeno and cook until softened, about 2 minutes. Stir in salt and curry powder and cook until fragrant, about 1 minute. Stir in tomatoes and cook until sauce becomes slightly thickened, about 5 minutes.

Add shrimp and cook until they become pink, stirring to coat with sauce. Stir in half the cilantro. Serve over steamed jasmine rice, sprinkled with remaining cilantro.
