Strawberry Rhubarb Crumble
Ingredients

1 pound rhubarb, washed and cut into 1" pieces, leaves discarded

1 pound strawberries, cleaned, hulled and halved

3 Tbsp quick cooking tapioca

1/2 tsp cinnamon

1 cup brown sugar

Vegetable cooking spray

1 1/2 cups oatmeal

1/3 cup brown sugar, packed

2 egg whites
-
1/2 cup slivered almonds or chopped pecans

1/4 tsp freshly ground nutmeg
Preparation

Preheat oven to 350F.

In a large mixing bowl, combine rhubarb, strawberries, tapioca, cinnamon and 1 cup of brown sugar. Mix well. Pour into a 10 inch pie dish or 8x12x2 inch baking dish coated with vegetable cooking spray.

In the same large mixing bowl, combine all of the remaining ingredients and mix well. Distribute evenly over the fruit.

Bake in a preheated oven for approximately 45 minutes, or until the filling is bubbly and the crumble is golden
