Whole Grain Couscous with Scallions and Mint
Ingredients

1 tablespoon extra virgin olive oil

1/4 cup chopped shallot

1/2 teaspoon fresh thyme leaves

2 cups low sodium chicken broth, preferably homemade

1/2 teaspoon sea salt

1/2 teaspoon freshly ground black pepper

1 cup whole wheat couscous or substitute quinoa or buckwheat for a gluten-free option

1/4 cup pine nuts, lightly toasted

2 tablespoons currants
-
1/4 cup scallions, chopped

2 tablespoons fresh mint leaves, chopped
Preparation

Warm the olive oil in a medium saucepan. Add shallots and saute until translucent, about 3 minutes. Add thyme leaves and pour in the chicken stock. Bring to a boil, add salt as desired, and pepper. Add couscous, cover and let sit for about 5 minutes.

Remove cover, add pine nuts, currants, scallions, and mint. Fluff with a fork and serve.
