Wilted Spinach with a Splash of Balsamic Vinaigrette
Ingredients

5 ounces fresh spinach, rinsed

pinch sea salt

1 teaspoon olive oil

1 clove garlic, thinly sliced

2 scallions, sliced on the diagonal

1 tablespoon balsamic vinegar

sea salt and freshly ground black pepper, to taste
Preparation

In a large saucepan, place spinach, with the water still clinging to the leaves from rinsing it, over medium-high heat. Add a pinch of salt.

When spinach begins to wilt, stir to allow even cooking. When spinach has completely wilted, 2-3 minutes, drain in colander.

Return pan to heat, add olive oil, garlic and scallions. Saute until soft and translucent, about 1 minute. Add balsamic vinegar. Add the spinach back to the pan, toss to coat with seasonings. Adjust seasonings to taste and serve.
