Winter Fruit Compote
Ingredients

2 cups fresh orange juice, plus more as needed

1/2 cup golden raisins

1/2 cup dark seedless raisins

1 cup dried apricots
-
1 cup dried cherries
-
1 cup prunes
-
1 cup medjool dates, pitted

4 cinnamon sticks

8 cardamom pods
-
1/2 teaspoon freshly ground nutmeg

1 tangerine, cut into wedges, seeds removed, skin left on

1/2 cup cognac,optional
Preparation

Preheat oven to 300 F

Bring orange juice to boil on top of the stove in a shallow casserole or dutch oven with a lid.

Stir in all remaining ingredients, except for the cognac.

Cover pan and place in oven for up to 2 hours.

Stir fruit and add more orange juice as it absorbs into the fruit.

When fruit is soft, and tangerine peel turns translucent, remove from the oven.

Fold in the cognac, if desired. Remove cardamom pods and cloves if you can find them before serving!
