Ingredients
- 2 medium carrots, peeled and sliced into 1/2" thick slices
- 2 tablespoons fresh ginger, peeled and chopped
- 1 small shallot, peeled and chopped
- 2 tablespoons honey (or agave or sugar for vegan)
- 2 tablespoons fresh lime juice
- 2 teaspoons toasted sesame oil
- 1 tablespoon reduced sodium tamari (or reduced sodium soy sauce)
- 1/4 cup rice vinegar (unseasoned)
- 1/4 cup avocado oil
Preparation
- In a blender, combine all of the ingredients. Blend until smooth. Store in a glass jar or covered container in the refrigerator for up to 2 weeks.
- Serve over crisp lettuce, a bit of shredded red cabbage, some sliced cucumbers, radishes and other vegetables as desired.
