Ingredients
- 3 cups sugar snap peas, washed and trimmed
- 2 teaspoons olive oil
- 1 teaspoon fresh ginger, grated
- 1/8 teaspoon ground black pepper
- 1/4 teaspoon salt
- Zest from 1 medium orange
- 1 tablespoon cilantro, chopped
- 1 tablespoon fresh orange juice
Preparation
- Heat large saute pan over medium high heat. Add olive oil and heat until hot. Add the sugar snap peas and cook, stirring frequently, until they begin to crisp on the edges, 3-4 minutes.
- Add in the grated ginger and orange juice and cook, stirring frequently, until the orange juice has been absorbed and the ginger is fragrant, about 2 minutes. Remove from heat.
- Stir in salt and pepper, orange zest and the chopped cilantro.
