Ingredients
- 1 cup old fashioned rolled oats
- 1 tablespoon chia seeds
- 3/4 cup Greek yogurt, whole milk or preferred plain yogurt
- 1 cup milk, any preferred kind(we used almond milk)
- 1 teaspoon vanilla extract
- 2 tablespoons maple syrup
- 1/4 teaspoon salt
- Various toppings such as fruit, nut butter, choc. chips
Preparation
- In a medium bowl, whisk together the milk, greek yogurt, vanilla extract, maple syrup and salt. Add the rolled oats and chia seeds and combine thoroughly. Cover and place in refrigerator overnight.
- The next morning, scoop 1/3 of the oat mixture into a jelly jar or bowl. It will be have thickened quite a bit. Add flavorings and fruit if desired. Options could be: Vanilla Latte: Add 1/4 cup strong coffee or cold brew and 1 1/2 tablespoons of mini chocolate chips Peanut Butter Choc. Banana: 1 1/2 tablespoons of creamy or crunchy nut butter, 1 1/2 tablespoons mini chocolate chips, 1/2 of a medium banana chopped Berry Banana: 1/4 cup mixed fresh berries, 1/2 of a medium banana chopped
