Arugula and Baby Roma Tomato Salad

Ingredients

  • DRESSING
  • 1 tablespoon shallots, finely chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper, freshly ground
  • 1 teaspoon Dijon mustard
  • 1/4 cup balsamic vinegar
  • 1 tablespoon honey
  • 1/3 cup olive oil
  • SALAD
  • 5 ounces baby arugula leaves, washed and dried
  • 1 pint Roma tomatoes, baby romas or grape tomatoes, cut in half

Preparation

  1. DRESSING Measure all ingredients into a bowl. Whisk vigorously to combine. Set aside
  2. SALAD In a large bowl, combine the tomatoes and arugula.
  3. Toss with 4 tablespoons of vinaigrette dressing, divide between 4 plates and serve. Save remaining salad dressing for another use.
