Easy Pineapple Rice
Ingredients

2 teaspoons olive oil, divided

1 small onion, diced

2 cups water

1 cup long-grain white rice, such as Jasmine or Basmati

1 cup fresh pineapple, diced

4 scallions, thinly sliced

1 tablespoon low sodium soy sauce
Preparation

In a medium saucepan warm olive oil over medium heat. Saute onion until soft. Add 2 cups water and a generous pinch of salt. Add rice and bring to a boil. Cover and reduce heat to low. Allow to simmer for 15 minutes or until grains are tender and water has absorbed.

In a medium skillet warm the remaining teaspoon of olive over medium heat. Saute pineapple until lightly browned, about 5 minutes. Fold pineapple into cooked rice. Add scallions and soy sauce and serve.
