Roasted Asparagus and Leeks
Ingredients

2 teaspoons extra virgin olive oil

1 leek, trimmed and thoroughly washed, and thinly sliced

3/4 pound fresh asparagus, trimmed and thoroughly washed

1 teaspoon lemon zest
-
salt and freshly ground black pepper, as desired
Preparation

Preheat oven to 450 F.

Line a baking sheet with parchment paper.

In medium bowl, measure the olive oil and add the leeks and asparagus.

Toss gently to cover vegetables with the olive oil.

Arrange in a single layer on the prepared baking sheet. Lightly sprinkle with salt.

Bake veggies in preheated oven for approximately 15 minutes or until they become tender and slightly wilted with brown tinges at the edges.

Rotate the pan and turn veggies over half way through the cooking time.

Season with lemon zest, and pepper and serve
