Tangy Spinach Salad with Fresh Fruit
Ingredients

10 ounces fresh spinach, well washed and dried

1 cup grape tomatoes, cut in half

1 medium carrot, grated or thinly sliced

3 fresh mushrooms, wiped clean and thinly sliced

1/4 cup scallions, washed and finely chopped or grated, about 4

1 cup strawberries

3 tablespoons sliced almonds or pine nuts, lightly toasted
-
2 tablespoons balsamic vinegar
-
3-4 tablespoons ketchup or barbeque sauce
-
1 tablespoon canola or olive oil
-
2 tablespoons low-sodium soy sauce
Preparation

To prepare the spinach, thoroughly wash, sort, remove stems, dry, and tear larger leaves.

Combine spinach with grape tomatoes, carrot, strawberries, scallions, and sliced almonds or pine nuts.

To make the dressing, combine balsamic vinegar, ketchup or barbeque sauce, canola or olive oil in a screw-top jar and shake well.

Pour dressing over the salad, toss well, and serve immediately.
