Ingredients
- 3 tablespoons apple cider vinegar or other light vinegar, such as rice vinegar
- 2 teaspoons dark sesame oil
- 1 teaspoon honey
- 1 cucumber
- 4 radishes
- salt and ground black pepper, to taste
- 1/2 cup cilantro leaves
Preparation
- In a medium bowl stir together the vinegar, sesame oil and honey.
- Partially peel the cucumber lengthwise leaving a strip of the skin between each peeled section. Cut off one end of the cucumber then thinly slice the cucumber either with a knife or a mandoline-type slicing tool. This can be done right into the bowl if using the mandoline-type paddle slicer!
- Thinly slice the radishes using the same method. Add to the bowl.
- Toss all of the ingredients together and allow to sit for 10 minutes to give the flavors a chance to combine.
- Season with salt and pepper to taste. Transfer to serving dish and garnish with cilantro leaves.
